Season chops and let set at room temperature for at least a half hour before cooking. Pre-seasoning the night before and taking them out of the fridge a half hour before cooking is ideal.
Grill chops at 400 degrees for 6 to 8 minutes per side. It’s important to check the internal temp often in the final minutes.
We like our chops pink in the middle, so we take them off when the internal temp reads a maximum of 135 at the bone. Try 125 to 130 if you like yours more pink.
Allow to rest covered for 10 minutes before serving. Enjoy!
