  • Season chops and let set at room temperature for at least a half hour before cooking. Pre-seasoning the night before and taking them out of the fridge a half hour before cooking is ideal. 
  • Grill chops at 400 degrees for 6 to 8 minutes per side. It’s important to check the internal temp often in the final minutes.
  • We like our chops pink in the middle, so we take them off when the internal temp reads a maximum of 135 at the bone. Try 125 to 130 if you like yours more pink.
  • Allow to rest covered for 10 minutes before serving. Enjoy!
