Instructions
Heat pan over medium heat and add lard, then onion and shallot. Sauté until the onion starts to brown. Add garlic and cook for another minute.
Add chicken or turkey and rice to the pan along with the butter, veggies, and All the Thyme seasoning (or 1/2 tsp dried or fresh thyme). Brown the meat and rice a bit. It will begin to stick to the bottom of the pan.
Add the white wine and scrape the pan to remove any cooked on bits. Continue to cook for another minute or two until the wine has been absorbed.
Add the stock 1/2 cup at at time, stir and allow it to absorb before adding more.
Once all of the stock is absorbed, add the parmesan cheese (omit for dairy free), garnish with fresh parsley and enjoy.
