Ingredients

lbs
walleye filets
or fish of choice
1/2
cup
corn meal
1/2
cup
flour
1
egg
beaten
lard
for frying, 1.5" deep in pan
Tarragon Tartar Sauce
1
cup
mayonnaise
1/4
cup
bread & butter pickles
minced
2
tbsp
shallot
minced
2
tbsp
capers
1/2
tsp
dried tarragon
2
tbsp
dijon mustard
2
tbsp
fresh parsley
minced
1
tsp
lemon juice
Instructions
Make the tartar sauce by mixing all ingredients in a bowl. Refrigerate for 4-8 hours before serving.
Place lard in frying pan and heat to 375 F.
Place corn meal and flour in two separate, shallow bowls. Beat egg and place in another shallow bowl.
Dredge fish first in corn meal, then in egg, and then in flour.
Deep fry fish filets in lard until golden brown.
Serve fish with tartar sauce and lemon wedges. Enjoy!
