  • Heat pan over medium heat and add lard, then onion and shallot.  Sauté until the onion starts to brown. Add garlic and cook for another minute.
  • Add chicken or turkey and rice to the pan along with the butter, veggies, and All the Thyme seasoning (or 1/2 tsp dried or fresh thyme).  Brown the meat and rice a bit. It will begin to stick to the bottom of the pan.
  • Add the white wine and scrape the pan to remove any cooked on bits.  Continue to cook for another minute or two until the wine has been absorbed.
  • Add the stock 1/2 cup at at time, stir and allow it to absorb before adding more.
  • Once all of the stock is absorbed, add the parmesan cheese (omit for dairy free), garnish with fresh parsley and enjoy.
