Ingredients
- 3 to 6 lbs pork shoulder roast bone in or boneless
- Smokey Citrus Seasoning or Coffee Rub
- 1 onion
- 3 cloves garlic
- 1 sprig rosemary or thyme, optional
- 2 lbs potatoes yellow, red or sweet
- 4 carrots large
Instructions
- Place thawed roast(s) in the bottom of the crock pot and season generously with Smokey Citrus Seasoning or Coffee Rub. Salt & pepper can also be used. Add 1/4 cup of water.
- Cut onion into thick slices and peel garlic cloves then place around the roast in the crockpot. Add a sprig of fresh thyme or rosemary if desired.
- Halve or quarter potatoes and cut carrots into 2 to 3” sections then layer on top of the roasts. If using sweet potatoes peel first.
- Turn crockpot to low and cook with the lid on for at least 8 hours. The longer it cooks the more tender it will be.
