Mossycup Egg Salad
- 8 hardboiled eggs or 6 duck eggs
- 1 shallot or 2 tbsp diced red onion
- 2 tsp chopped fresh herbs dill, tarragon, chives
- 1/2 tsp curry powder
- 1 tsp mustard
- 1 cup mayo or greek yogurt
- salt & pepper to taste
- Roughly chop hardboiled eggs and add to a bowl.
- Mix in chopped herbs, spices, mayo, mustard, and salt & pepper. Mash and stir until mixture is at your desired consistency.
- Serve on bread or lettuce wraps. Enjoy!
