Tarragon Tartar Sauce w/ Fried Fish

Ingredients

  • 1 lbs walleye filets or fish of choice
  • 1/2 cup corn meal
  • 1/2 cup flour
  • 1 egg beaten
  • lard for frying, 1.5" deep in pan

Tarragon Tartar Sauce

  • 1 cup mayonnaise
  • 1/4 cup bread & butter pickles minced
  • 2 tbsp shallot minced
  • 2 tbsp capers
  • 1/2 tsp dried tarragon
  • 2 tbsp dijon mustard
  • 2 tbsp fresh parsley minced
  • 1 tsp lemon juice

Instructions

  • Make the tartar sauce by mixing all ingredients in a bowl. Refrigerate for 4-8 hours before serving.
  • Place lard in frying pan and heat to 375 F.
  • Place corn meal and flour in two separate, shallow bowls. Beat egg and place in another shallow bowl.
  • Dredge fish first in corn meal, then in egg, and then in flour.
  • Deep fry fish filets in lard until golden brown.
  • Serve fish with tartar sauce and lemon wedges. Enjoy!
