Ingredients
Tarragon Tartar Sauce
- 1 cup mayonnaise
- 1/4 cup bread & butter pickles minced
- 2 tbsp shallot minced
- 2 tbsp capers
- 1/2 tsp dried tarragon
- 2 tbsp dijon mustard
- 2 tbsp fresh parsley minced
- 1 tsp lemon juice
Instructions
- Make the tartar sauce by mixing all ingredients in a bowl. Refrigerate for 4-8 hours before serving.
- Place lard in frying pan and heat to 375 F.
- Place corn meal and flour in two separate, shallow bowls. Beat egg and place in another shallow bowl.
- Dredge fish first in corn meal, then in egg, and then in flour.
- Deep fry fish filets in lard until golden brown.
- Serve fish with tartar sauce and lemon wedges. Enjoy!
